Salmon canning class offered in Fairbanks

A four-hour workshop on how to can salmon safely with a pressure canner will be offered Oct. 14 in Fairbanks.

The University of Alaska Fairbanks Cooperative Extension Service will host the workshop for beginning or advanced food preservers. Fairbanks agent Leslie Shallcross will teach the hands-on class from 10 a.m. to 2 p.m. in the Harper Building, at 4180 Geist Road.

Shallcross will describe the U.S. Department of Agriculture-recommended processes for canning salmon in jars. Participants will jar salmon and take home a jar of processed fish. Extension will provide all the supplies and the salmon.
